Almond Marzipan Bites
This was one of the easiest and absolutely tastiest things I have ever made. I never realized how much I lived for Almond Extract flavor! To the point of no restraint, I must've eaten 90% of the Marzipan bites pictured. #yolo amirite? My favorite part is that this is a no-bake recipe which means you can eat it almost immediately after making it.
Yield: 10-15 bites (depends on the size of your bites)
Ingredients:
- 3/4 cup almond meal
- 5 TBL powdered sugar
- 2-3 TBL light corn syrup
- 1/4 TSP rose water (optional but highly recommended)
- 1/4 TSP almond extract
- Pinch of kosher salt
- 1/2 cup of semi-chocolate chips
- 1/4 cup of sprinkles
1. To a food processor, add the almond meal, sugar, almond extract, and salt. Pulse to combine. With the processor running on low, add the rose water and drizzle in the corn syrup until it blends to form a dough. It may still look crumbly but if you squeeze it together and it forms a shape, it's ready.
2. Take the dough out of the food processor, form it into a tight ball and wrap it in plastic wrap. Refrigerate for 30 minutes.
3. Melt the 1/2 cup of chocolate over a double boiler, stirring it until completely melted and smooth.
3. Bring out the marzipan and divide the dough into 10-15 equal portions and roll them into bite-sized balls.
4. Dip the marzipan balls in the chocolate to your desired coating and sprinkle them with sprinkles before the chocolate dries. Place them on a wire rack to catch any excess chocolate.
Eat right away or put them back in the fridge to allow the chocolate to harden. Either way, you're in for a treat!
